Vegetables

Our Day 3 Rule is not working!

That is a rule in our house whereby I cook for 2 days but on Day 3 we eat out.

To reinforce this, my meal planning and end results go like this:

  1. Day 1 – A fairly delicious healthy meal with protein, vegetables (a melody), a starch, and a fresh salad.
  2. Day 2 – Still almost passable.
  3. Day 3 – A no longer attractively displayed meal with a slightly unappetizing aroma, and no taste.  I don’t do this on purpose either.  It just happens.

And Bill knows we have to eat out!  Today is Day #3 but I think he has forgotten.

Saturday I went for MRI #5.

Good thing I handle the claustrophobia and loud banging noises well.  I always ask them to play DooWop music but they don’t really know what that is so they get “Oldies” which are never quite old enough.

Ah well.  But I am anxious for the results of this one because BigFoot is no longer Big!  Can this be a happy omen?  The swelling is waaaay down to an almost SkinnyFoot!

The trip for the MRI was also kind of fun since we found our way to a Roanoke, Virginia shopping center and had lunch at the Wild Flour Café.  Isn’t it nice that this old couple can still enjoy good food (not cooked by me!) and good conversation away from home?

Two weeks ago I had a Sleep Apnea Test (which they prefer to call a “study”).  I must say it was a tortuous experience but they called today to announce that “You do not have Sleep Apnea and your oxygen levels are fine.”  Ha! I have passed the Study! Hurrah!

I do understand why the dr. ordered it though.  He kept saying my tongue was too big for my throat or the throat was too small.

So we started with a finger test at home that didn’t look good but perhaps the finger was too small or the test thing was too big because they think it accidentally slipped off during the night.  No matter.  I sleep like a log – always have – and no snoring either.

The quote above about the Melody of Vegetables is true!  And isn’t this a grand and happy Melody of Meanderings?

I have just received a new book on nutrition.

That makes hundreds of books by different authors I have received over time.   Hope dies slowly.  And I thought this, like all the others, would end up being donated and sadly, forgotten.

But this book is different and here to stay for it finally offers secrets to finding the Fountain of Youth!

It tells the story of vegetables and fruits – not just that we should eat them (boring!), but where they started, how they have been changed with man’s manipulations (notice I did not say “woman’s”), and  what we should look for now to regain lost taste sensations and the most life-giving qualities for optimal nutrition.

I am not good at book reviews, but here is a primitive summary:

Mom never taught me that one apple can have a good side and a bad side less-than-optimal side.  Did you know that?

If one side of the apple grew up in the sun, it built a protective coloring for survival (good side).  And if the other side of that apple was covered by shade, it grew up a little pale (bad side).  Oh, go ahead and eat the whole apple, but look for an evenly colored red one next time! And the darker, the better.  I know this does not make perfect sense, so you will just have to get the book.  Review by Dor.

  • But I did learn that color is the standard for buying any almost any vegetable or fruit. Granny Smith apples are an exception because they are the most nutritious but are light green in color. Go figure!
  • Have you ever tried a dark brown tomato?  Delicious!
  • Did you know that microwaving corn on the cob is better for you than boiling?  You can microwave them right in their husks!
  • How about this:  Let chopped garlic rest for ten minutes before cooking to boost its ability to fight cancer and cardiovascular disease!
  • Ounce per ounce there is more fiber in raspberries than in bran cereals.

Oh, but I could go on.

No, I am not getting a commission for recommending it.

The real purpose of this post was to share my own fabulous Homeplace Mandarin Salad recipe with you.  This one is guaranteed to impress even the most finicky salad eater.

Book Eating on the Wild SideOh yes – the name of the book I’ve been raving about is Eating on the Wild Side: The Missing link to Optimum Health, by Jo Robinson.

And

Here is the recipe for:

MANDARIN SALAD

Combine Romaine and Spinach (darkest green please!) in large bowl

Gently mix in 1 can of “Dill Green Beans” (drained) or jar of “3 Bean Salad” (drained).

Sprinkle in sunflower seeds – any amount to taste.

Then on top of the salad add sliced onion rounds (darkest red) and

 A can of drained Mandarin oranges, plus

 Some fresh dill if you have it, and

Good sized dollops of Ranch dressing. 

Serve in pretty glass salad bowl and mix at the table.

This is a real winner that gets rave reviews.

When I was a girl, we took family drives for recreation and entertainment.  I suspect my parents also drove us around just to cool off and escape mosquito invasions. Evidently mosquitoes don’t like wind generated from open car windows.  We lived in Florida you see, and had no air conditioning at home and not in the car either.  We would drive along at the high speed of about 30 miles per hour and my brother and I loved to hang our feet out the windows, or wave our hands in the wind, greeting truckers to put smiles in their day.  We thought that worked because they always waved back.

A Pickle for a Nickel

On our drives, we stopped at little country stores for fresh fruits and vegetables.  The ice cold Cokes in  big coolers were sold in frosty bottles (no such thing as “diet” versions). There was root beer too and all manner of fascinating other possibilities like candy, comic books and card games.  Some even had barrel pickles and you picked your pickle for 5 cents right out of the barrel.   Our traditional family outings took us out of the realm of the humdrum into new and fascinating other worlds.

The Upscale Country Store

Nowadays here in Virginia, my grown up country drives still feature those sorts of roadside stops and they vary from just lean-to sheds to actual general stores, and many are vastly expanded, upscale versions.  For instance, a few miles from my home there is a Country Store that has been there for over 52 years.  The place is still a local favorite  where every one finds fresh harvests of fruits and veggies served up with congenial conversation.  There are lovely peaches, watermelon and of course tomatoes in season, and apples and pumpkins in the fall.

Why do I call it upscale?  This store is now carrying the finest meats/cold cuts and the best brands of creamy ice cream, and they sell casual clothing, gifts, flags, jams and jellies, handmade sandwiches, and a lot of basic essentials like bread, milk and local honey.  Country hams are always big sellers, but beware if you are a “Yankee” because you may not be prepared for the heavy salt.  Country ham, sliced paper thin and served  on a warm buttered biscuit is an extra special treat.  Virginia Ham Biscuits make wonderful snacks for parties too.

Remnant of Olde Time America

Roadside country stores still stir me, and as my husband and I drive by, I feel a little twinge of excitement and I want to scream, “Stop!”  Of course he will stop if I ask, but he lacks the necessary sense of wonder so we often travel on by.   Bill grew up in the Bronx, New York and his streets and alleys were no doubt devoid of roadside stands.  His imagination does not soar at the thought of the treasures we might find.  And I cannot convince him that even if all there is to experience is color, conversation, fresh corn and tomatoes, stepping back in time to an America of simpler pleasures is always worth the stop.
