Following in the noble footsteps of one of my favorite bloggers, MJ of Emjay and Them, I have embarked upon a wheatless, almost-grainless, eating program. People like MJ are raving about the Wheat Belly weight loss theory and feeling good too. I have been doing this now for about 5 weeks and have lost about 4 pounds – also feeling pretty good.
However, being skeptical of almost everything (as noted by the array of vitamins and minerals in my tried and never-true massive collection), I am only teetering on the edge of issuing a rave report about WHEAT BELLY. Isn’t that the most awful title for a program about healthful eating?
Of course, things like cookies, cakes, muffins, bread and pancakes, etc. that have a flour base are no-no’s and they naturally become delicacies to be missed.
But I have a secret remedy!
It’s a tried and true recipe discovered even before reading the first two Wheat Belly books.
FLOUR-LESS Chocolate Chip Cookies
(But, if you are allergic to peanuts, please ignore this recipe.)
1 Egg
1 Cup brown sugar (I use coconut sugar – 1 cup = 1 cup)
1 tsp Vanilla
1 Cup chocolate chips (I use dark choc chips)
1 Cup chunky peanut butter
Mix all. Drop by minimum Tablespoons onto a parchment sheet or Silpat
Bake at 350 degrees Farenheit for 10 to 12 minutes.
Note: If I can only control how many of these to eat in a day, the Wheat Belly routine may just work! I am averaging SEVEN now and still lost 5 pounds! Working on decreasing to SIX (cookies that is).
Wow!! I am very very impressed with you my friend :). Although those cookies look scrumptious, I could never do what you are doing. I love my carbs! I actually don’t eat a lot of bread at all (even though it’s delicious), but I love my cereal for breakfast and don’t even get me started on how much I love pasta :). And the problem is that to buy the alternatives, you end up spending so much more money, and I can hardly afford my grocery bill as it is. Keep it up Dor! I am very proud of you and can’t wait to hear more about your progress.

Thank you for sharing this recipe; the cookies look delicious. Dymph and I have both been wheat free for about six months. In addition to just feeling better, we’ve each lost about 20 pounds. My cousin has lost 50 since eliminating wheat from his diet.

Yep – I will keep you posted on any progress my friend. Bread is my weakness and chocolate chip cookies (but the recipe solves the latter). The Wheat Belly books, blog, and newsletter all offer alternatives too but I haven’t tried any of those yet. 🙂

Slower is better, Dor. When you lose weight too fast, your odds of regaining are greater. Keep doing what you’re doing.

Good on you, Dor! The cookies look delicious! I am not a sweets person, so I didn’t really have to “give up” anything, but what I’ve had to do is be much more strategic. IE last night we went to a gathering at another couple’s house. All of the wives, including me, brought an appetizer. I brought something yummy but what I CAN EAT. (didn’t want to assume there’d be anything there for me). It worked out – plus a friend brought shrimp and another a veggie tray – bonus 🙂 I still will bake cookies for Hubby, the old-fashioned way – with Crisco, flour & sugar – but it’s good to know there are lots of yummy alternatives, too. Cheers! 12lbs, 15″ in 50 days! MJ

Oh happy day! Someone else to talk to and share with that’s gone wheat free! I’m Paleo, of course, but that’s still wheat, and sugar (mostly) free! I was going to tell you, those cookies look fabulous and tell your non peanut eating friends like me, they can simply switch the peanut butter for almond or sunflower seed butter!! I’m so happy for you, on the way to better health!!

I must admit that I’ve cut back on grains since reading MJ’s post, but haven’t given it up completely. I am eating better, though, and have lost 5 pounds. Or 6. Depending on the mood of the scales!

Yes, I am eagerly surfing the paleo recipes that show up and I realize the Wheat Belly recommendations fit right into a paleo regime as well. Hopefully you and I can share ideas and recipes. I’m not a great cook (although lots of people are fooled) but I’m willing to try if the ingredients aren’t too many or too exotic. 🙂

If you’re craving bread or a sandwich, you can make “Cloud bread” – it’s eggs, cream cheese & baking powder – you can find the recipe here http://www.food.com/recipe/carb-free-cloud-bread-411501 I didn’t use sweetener but I added some Rosemary. They come out like meringues/English muffins. I put in the toaster oven with Tuna Salad – a yummy different lunch yesterday 🙂

it’s good under something for an oven toasted sandwich but I scorched the liver out of them in the actual toaster. They’re light and fluffy, so know that part – easy on the toaster setting!

Ok, I’m making my experiment today, I’m subbing out almond butter for chunky peanut butter and using dairy, nut and soy free chocolate chips from Enjoy Life. I’ll let you know how they turn out but I’m thinking they are gonna be the best Paleo cookies ever! I bet I have a hard time just eating one!!!

Oh no – I’m sorry the adaptation didn’t work Kim! Part of the allure of these cookies is in the “chunky” bits of nuts so maybe almond butter is too smooth -and in my experience a bit dry. I haven’t tried using “natural” chunky peanut butter and am ashamed to say I use Jiff, but the natural substitute could work well too.
